Recipe Box: Lemon Snowdrops

This recipe actually comes from the 1969 Betty Crocker’s Cookbook that belonged to my grandmother.  These cookies would be perfect for a tea party or even a baby shower.  They are delicate and delicious!:)

Lemon Snowdrops

1 cup butter or margarine, softened
1/2 cup powdered sugar
1 tsp lemon extract
2 cups flour
1/4 tsp salt

Mix thoroughly butter, powdered sugar, and lemon extract.  Blend in flour and salt.  If dough is soft, cover and chill.

Heat oven to 400 degrees.  Shape dough by level teaspoonfuls into balls.  Place 1 inch apart on ungreased baking sheet; flatten slightly.  Bake 8-10 minutes.

Immediately remove from baking sheet; cool.  Put cookies together in pairs with Lemon Butter Filling (recipe below).  Roll in powdered sugar.

Lemon Butter Filling

1/2 cup sugar
2 tbsp cornstarch
Dash salt
1/2 cup water
2 tbsp butter or margarine
2 tsp grated lemon peel
3 tbsp lemon juice
3 drops yellow food color

Mix sugar, cornstarch, and salt in saucepan.  Stir in water gradually.  Cook, stirring constantly, until mixture thickens and boils.  Boil and stir 1 minute.  Remove from heat.  Stir in butter and lemon peel.  Stir in lemon juice and food color.  Cool thoroughly.
